Today Wedding & Event Management Services  is featuring an interview with Ian Perry & Penny Stratford from the great new Limestone Coast business Seasoned Catering. With over 45 years of culinary expertise between them, this highly talented duo could be the perfect choice for your next wedding or event.

Ian – What makes you different from other caterers?

We like to tailor our menus to suit our client’s needs and will work in with the location of the event. We pride ourselves on being a versatile catering business that puts the client first. We like to visit the clients in their home to discuss their event and only work on one event on the day giving our clients absolute exclusivity.

Penny – How long have you been in business and in catering in general?

I have been in the catering industry since I was 17 years of age working part time while I was studying Business Management (Hospitality and Tourism) at University. Locally I have worked at The Gallery in Robe, with caterer Kirsty Mann and at the Naracoorte Caves. I have front of house experience gained by working at both the MCG in Melbourne and the Tennis Centre.

Ian – can you make a specialised menu for your client e.g. what about a family recipe, organic menu?

Actually our first function was an all organic menu so we are very adaptable to our client’s dietary needs. We can also create and develop amazing menus to match our local wines also and have prior experience in this field by working closely with both Rymill & Hollick Wines and many Beefsteak & Burgundy groups. 

 Ian – What are some of your speciality dishes?

One of my speciality dishes that I am extremely proud of is my ‘Sugar cured ocean trout with fennel panacotta’ and one of my favourite desserts is ‘Chocolate Chestnut terrine with chocolate almond soil and Amaretto icecream’. I also love working with Pork belly and duck.

Penny – Do you provide staff and what other services do you include?

We will provide the food, assist the client to source the best staff for service and will hire any crockery, cutlery or glassware. No request is too big!

Penny and Ian –  What is your most favorite location where you have catered/worked at?  

Penny: Catering for royalty at a polo match in Cirencester, England

Ian: Buckingham Palace where I was invited for a short term contract and had the pleasure of cooking for most of the royal family including Princess Beatrice as she was growing up. Also I worked in Bermuda at a private resort for three years which was the most fantastic location with great fishing and fresh local produce!

You work very hard perfecting all of the details for your wedding from your dream gown to flowers and the cake, but you mustn’t forget about your makeup. On the morning of your big day, prepare to be pampered! Hiring a makeup artist will ensure a flawless look and fabulous photos – and your makeup and smile will radiate throughout the entire day and evening. Wedding & Event Management Services had the privilege of speaking to Mount Gambier’s award-winning professional makeup artist Andrea Rout, who shared some of her secrets…….

How did you make the transition into makeup artistry?

When I was younger I always wanted to do training in make up and beauty therapy. It was only after my second child that I took up professional training. I started in the health and fitness industry and then advanced into the beauty arena taking a holistic approach.

How far out from their wedding day or special event do you advise that a client contacts and books your services? Do you suggest a trial run?

Most clients book 12 months in advance for special events like weddings – especially when these are busy times of the year e.g. holidays. I normally take on one wedding only per weekend. I do recommend a trial run so that I can see what my client likes and dislikes and we can both connect with each other. I like to use my skills and knowledge to achieve the right look.

Provide a short description of your services and a general price range for your services.

Mainly make up, tanning, beauty services – like facial waxing and tinting and I am now introducing eyelash extensions. I have a wide range of mineral makeup products and offer makeup lessons for individuals and groups.

Wedding makeup starts at $55.00 per person with airbrush makeup being an extra $10.00 per person. Prices are tailored to the client’s needs and I do provide a discount for groups of three or more people.

What are the differences between airbrush and regular makeup applications?

It is really a personal preference depending on what finish you require. Airbrush makeup is fantastic for wedding photography and provides a lovely smooth finish but traditional mineral makeup may suit a client also – depending on skin type.

Are there any extra tips that you can give to a bride to help make her look her absolute best on her special day?

I suggest starting a regular skin routine and consulting a beauty professional six months before the event. I provide a regular newsletter to my clients with tips about looking after themselves holistically and maintaining a good diet and exercise. I also suggest brides to take the vitamin Executive B one month before the wedding so as to help cope with stress.

What makes your business different from other make-up artists and beauticians in the area? 

I offer quality and professional service to my clients and look at myself as their own personal makeup artist. I have no issue travelling anywhere in the Limestone Coast.

I will also be offering a new line of glamour contact lenses – great for fancy dress parties!!

1.What options does your venue offer?

We have three superb venues to choose from:

(a)    The Barn Steakhouse – which serves an a la carte menu and boasts the best steaks in the region. Set menus are available by arrangement.

(b)   The Oak Tree Room – an excellent new venue for meetings, conferences, private dinners, cocktail functions and intimate weddings. There is a wide choice of set menus on offer.

(c)    The Main Palais Room – available for conferences, weddings, district meetings, seminars, gala dinners and expos

2. What types of accommodation are available?

The Barn offers a multitude of luxury accommodation to suit everyone’s tastes and budget. There are self-contained apartments, garden view rooms, brand new deluxe king suites, some with spas and a four-bedroom house accommodating up to 10 people, all with stunning views.

3. What is the capacity range for each of your dining areas?

The Barn Steakhouse seats 100 people but can accommodate private functions for 40 – 50 people

The Palais Room seats from 80 – 800

And the new Oak Tree Room seats 65 banquet style, 95 – 100 theatre style and 30 in a U shape

4. What is your pricing for your venues?

The Oak Tree Room is $220 for a full day inclusive of plug and play AV equipment and water, mints, pens and pads for all delegates.

The Main Palais Room is negotiable dependant upon the event. There is ‘no hire fee for weddings’.

5. What else should brides and other prospective clients know about your venue?

The new piano bar is available to use for pre dinner drinks, the Oak Tree Room provides state of the art AV equipment, and the bride and groom are welcome to use our spectacular gardens for the photos and the wedding ceremony at no extra charge.

6. What makes your venue and packages unique?

For weddings with more than 100 guests we offer a complimentary night’s accommodation in our deluxe king suite to the bridal couple.

I am happy to introduce you to Michele Hill from Floral Edge, our featured vendor for our Vendor in the Spotlight interviews. I’ve known Michele for many years and she is one of our great florists in the Limestone Coast region. Michele is well respected and is always lending her designs and talents to many of our great events in the area. Whether its traditional, contemporary or ‘Green’, Michele and her team can always give you flowers that will stand out and become part of the lasting memories of your special event. I am happy to share with you our Q&A with Michele.

How did you get started in the florist industry?

When I was 16 and working for my dad, the parents of one of my close friends bought a florist in Mount Gambier, and they hired me to deliver flowers after work. As they got busier, they began to teach me how to do arrangements, and I loved it! I worked for five years as a florist in Mount Gambier before travelling overseas, and then spent four years working as a florist in Adelaide. I eventually returned to Mount Gambier and worked for other people, before taking the plunge and opening my own business – Floral Edge – five years ago. I’ve never looked back!

What type of services do you offer your clients?

What are some of the latest trends?

What inspires you and how do you keep your vision fresh?

I am inspired by everything I see and read – I am constantly studying magazines, books and even newspaper wedding pages to keep abreast of national and international trends. I also attend a lot of short courses with well-known florists – you really need to put yourself out there and constantly strive to improve your work rather than sit back and do the same old thing every day. A lot of brides can be overwhelmed by the amount of choices and decisions they need to make in the lead-up to their wedding day, so many depend on me for direction and advice. You need to be a good listener, instinctive and intuitive. There is nothing more rewarding than having a bride say “I was absolutely thrilled when the bouquets arrived – they were even better than I was imagining!”

Explain how your business is environmentally friendly?

We order market-fresh, seasonal blooms daily in order to minimise stock losses, and recycle all green waste via compost or council collection. All cardboard and plastic packaging associated with wholesale deliveries is also recycled.

We offer a range of recycled paper and packing for flower arrangements, and a weekly or monthly replenishing service – we’ll deliver fresh flowers to your home, office, or workspace and arrange it in your own vase to cut down on packaging.

We also hire out a range of candelabras, table centrepieces and other decorations to make the wedding more cost-effective for brides, and to help cut down on consumption.

How did you get started in photography?

I started out working for Scrapbook Creations Magazine as a regular contributor and photography was a big part of this.  I am a trained teacher with a major in Music and IT so my creativity and computer/internet skills have been there from an early age. My teaching and magazine experience led me to a brief lecturing role at the TAFE college and I spent two and a half years writing photography and Photoshop ‘how to’ articles for various Universal Magazine publications including Scrapbook Creations. My business has been going strong for three and a half years now and is run from my home based studio.

What types of services do you offer your clients?

Family portraiture, weddings, location photography and commercial photography with a candid feel.

How would you describe your photographic style?

I try to take shots from a different perspective. I will go to any length to get a different angle and I like to show relationships through my images. You’ll rarely hear me say “smile” as I like to wait and capture moments that are natural and real.

What is your favourite wedding image?

The truthful answer to this question is that choosing a favourite is really like choosing between my own children – I feel a connection with each set of wedding photos that I take. Every wedding seems to provide me with a new ‘favourite’! However, in saying that, I do particularly love a recent image of a bride and groom before they were heading off into the reception. The bride was making her way back to her groom and I noticed the sunburst appearing between them. It was like all the planets had aligned! I was definitely in the right place at the right time.

One piece of advice for clients or brides-to-be?

Bring with you a list of possible contrasting locations like a garden, urban and rustic setting – preferably something that you have an emotional connection with. It may be where you first met, where the proposal took place, something that reminds you of a special memory.

Also ‘go with your heart’ – don’t be swayed by well meaning friends and family. Don’t change a decision that you have had your heart set on right from the start. Finally choose vendors that you trust and give them the freedom to do what they do best.

What steps are you taking within your business to be environmentally friendly?

All clients, their families and friends can log into my website and view the proofs online. All proofs are uploaded in a password protected gallery where they can be ordered, reducing the need for unnecessary printing costs.

Welcome to the first of many professional spotlight interviews – Tanya O’Leary would have to be one of the most creative photographers I have worked with in this region. She truly prides herself on capturing the best moments in life! Tanya generously took time out from her busy day recently to chat with me and answer some Q and A about herself and her business. Enjoy!

How did you get started in photography?

Since I was eight years old I remember having a passion for photography.  At the age of nine I won a Kodak photographic competition and it started from there. I started taking photos for friends and the constant demand from then on turned into my business as it is today.

Describe your photographic style?

Definitely natural contemporary – I capture the emotion of the person I am photographing – their inner spirit.

 If you could offer one piece of advice to brides to be what would it be?

Get your makeup done by an artist who offers airbrushing because it gives a stunning flawless look.

What are your favourite locations for wedding photos?

I don’t plan any specific locations – I just follow the light on the day and see where it takes us.  It’s all about the emotion of the couple and that’s what I bring out in my photos and why clients keep coming back.


What steps are you taking within your business to be environmentally responsible?

All my proofs are stored onto my computer, edited and then placed on line.  That way clients only choose the photos that they need and there is no printing waste.
